Krill is a modern Filipino restaurant in Durham, NC, reimagining traditional flavors through a fresh, community-driven approach. Founded on the idea that bold, soulful food brings people together, Krill celebrates the depth of Filipino cuisine while embracing the vibrant energy of Durham.
Krill has always been locally owned and operated, now led by Nick Jordan and Eric Porper, alongside Executive Chef Karl and Pastry Chef Paula—a husband-and-wife team from the Philippines, bringing their family's cherished recipes to life in a modern, elevated way. With the guidance of Giorgios Bakatsias still present, Krill continues to evolve while staying rooted in its locally driven vision.
Krill is more than a restaurant—it’s a gathering space, a cultural introduction to Filipino traditions, and a place for regulars to feel at home.
Leadership & Culinary Team
Karl (Executive Chef)
Chef Karl's culinary expertise is inspired by his Filipino family recipes, modernizing them while staying true to their essence. His approach blends traditional Filipino flavors with innovative techniques, creating dishes that are both nostalgic and new. He has worked under executive chef leadership in New York and, for the past few years, honed his craft in Durham under previous executive chef Jason.
Paula (Pastry Chef)
Paula has honed her craft as both a pastry chef and sous chef, bringing a deep understanding of Filipino pastry traditions to Krill. She specializes in Filipino-inspired pastries, blending classic techniques with modern interpretations to create bold, balanced flavors. She trained in New York kitchens before refining her pastry expertise in Durham under previous executive chef Jason.
Nick Jordan and Eric Porper, the local owners of Krill, are dedicated to creating a community-driven dining experience that reflects Durham’s entrepreneurial spirit and cultural vibrancy. With deep ties to the art, culinary, technology, and non-profit sectors, they have built platforms that foster creativity, connection, and growth.
Nick Jordan, founder and CEO of Smashing Boxes and co-founder of Unboxed Venture Studio, has been a key force in Durham’s entrepreneurial landscape for nearly 15 years. Through his work in technology, innovation, and placemaking, he has cultivated strong relationships across industries and helped shape Durham’s business ecosystem. “We are more invested than ever in making downtown Durham a thriving community—both economically and culturally,” says Jordan.
Eric Porper, co-founder of Unboxed Venture Studio and Emblem Vault, is passionate about empowering local entrepreneurs and artists. “By preserving local culture and creating opportunities—from tech and entrepreneurship to non-profits and DBCo at 506 Ramseur—we’re building a lasting legacy that strengthens Durham’s identity for generations.” he shares.
Their leadership at Krill reflects their commitment to community engagement, creating a welcoming space where people come together over reimagined Filipino family recipes and shared experiences.
